Today is 大年初四 ! How is everyone’s CNY coming along ? Well, for once, I am kinda looking forward to going back to work tomorrow ! LOL. Because in a few days’ time, I finally get to travel again after almost one year later. And best of it all, it’s gonna be a solo trip once again for some real ME time. So looking forward to waking up to a non-itinerary holiday, roaming the streets, going for prayers for the loved ones, cafe-hopping, and hopefully by the time I am back, I will refreshed, energised with positivity vibes and better aligned to what I am gonna do with my life and making the right decisions henceforth.

CNY is a time for munching on goodies. But that’s quite a limited number of goodies I go for. Most of the bakers usually love to bake for others and not for themselves. Weird, isn’t it ? But it’s always a blessing to be able to give and seeing your loved ones enjoying the food you have made is something that’s countlessly priceless to any home cook or baker.

Considering a fresh near year ahead now, there has been many wishes on my mind that I’ve been hoping that can be fulfilled. Other than praying for the well-being of all the loved ones, another being having all the time to cook and bake to my liking. So here’s one to kick start the new year motivation ! One of my favourite CNY snack, in fact I can have this all year round and not necessary during the festive. And best of it all, I had it air fried instead of deep fried. I am really glad that I am able to gear up my air fryer for more stuffs now !

Sambal Shrimp Rolls 叁巴虾米卷


Recipe type: Snack

Cuisine: Chinese

  • Some spring roll skin (measures 12.5cmx12.5cm, cut into ¼)
  • 15 dried chillies
  • 5 pips garlics
  • 5 shallots
  • one small piece of belachan
  • 50g dried shrimps
  • 1 tsp sugar (adjust according to taste)
  • 1 tbsp cooking oil
  • 1 egg, lightly beaten

Fret not if you realise that your sambal paste mixture is not dried enough whilst wrapping. This can be rectified by using 2 layers of spring roll skin and wrapping it together. But be sure to finish the shrimp rolls fast as the excess moist will make the shrimp rolls less crunchy faster too.
Using 2 layers of spring roll skin can enable the shrimp roll to be more crunchy after air frying too.
You can always replace the sambal shrimp filling with chicken or pork floss as to your liking.

Golden Egg Steamed Tofu 黄金豆腐蒸蛋 – Eat What Tonight

Had too much good food during the CNY ? LOL. So it’s time for a simple fare then ! Something to go along with congee or porridge, this Golden Egg Steamed Tofu is perfect for the occasion. It’s light enough as a dish and yet comprises of tofu, egg, salted egg and minced all in one dish.

Probably you may ask.. where’s the tofu arh ? LOL. Well, it has been well hidden under the pile of minced ! The silky egg custard paired alongside with salted egg yolk, savory minced and plain tofu seems quite a good combination for a quiet and light meal after all the heavy indulgence during the CNY.

And I am counting down to my long awaited break that’s forthcoming in another 2 days’ time ! I am gonna take this opportunity to really de-stress and let loose ! And hopefully being MY month of the year, all my well wishes will come true in no time !!

Golden Egg Steamed Tofu 黄金豆腐蒸蛋


Recipe type: Main

Cuisine: Chinese

  • 2 pcs salted egg yolks
  • 1 block tofu
  • 1 egg + 100ml water
  • ¼ tsp salt
  • dash of pepper
  • 1 tbsp cooking oil
  • 140g minced meat
  • 1 tsp light soya sauce
  • 1 tsp oyster sauce
  • ½ tsp sesame oil
  • ½ tsp sugar
  • 2 tsp corn flour
  • dash of pepper
  • some chopped spring onion
  • some fried shallots

Straining the egg mixture removes all the air bubbles so that the egg will be smooth and silky after steamed.
The length of time taken to steam the egg is approximate, depending on the size and depth of the steaming plate used. In general, I prefer the steamed egg to be slightly wobbly on the top after steamed. If you are worried that the egg will be over steamed, you can off the flame around the 15-minutes mark and allow the remaining heat of the steamer to continue steaming the egg.

And so…I am back !!! Enjoyed my “me trip” thoroughly though it was a bit tiring with the exhaustive walking to get to certain sights. It was really a relaxing trip which I got some time off to de-stress and get away. Coming back refreshed and energised, I am all good to start on a “new” journey of my life ! Hopefully things will just get better from here from now on !!

Butter or pound cake is something I can never get tired of, despite baking it for the umpteen times. And recently, mom gifted me with some organic chia seeds which I include into the pound cakes and I must say, it tastes fabulous ! It’s a good substitute to poppy seeds which is not allowed in Singapore and with all the health benefits of chia seeds in comparison, this cake is a definite must try. Compiled with premium french butter, the aroma and ultra rich buttery texture and taste is simply irresistible.

And for a basic pound cake recipe, the one from Rose Levy Beranbaum is by far the most fool and noob proof. It’s simple and straight forward and yield the best results. The batter can be prepared in less than 15 minutes and all you gotta do is to sit back and relax whilst the oven does all the rest of the work. I have baked and shared this cake with several people and everyone just had thumbs up for this cake ! Hope you will love this cake as much as I do too !!

Chia Seeds Pound Cake 奇亚籽磅蛋糕



Recipe type: Dessert

  • 3 large eggs, room temperature
  • 3 tablespoons milk, room temperature
  • 2 tsp vanilla extract
  • 150g cake flour, sifted
  • 1 tsp baking powder
  • ¼ tsp salt
  • 130g sugar
  • 1 tbsp chia seeds (or more if you desire)
  • 185g unsalted butter, room temperature
  1. In a medium bowl, whisk together the eggs, milk, and vanilla extract.
  2. In the bowl of your electric mixer, with the paddle attachment, place the dry ingredients (flour, baking powder, salt, sugar and chia seeds) and mix on low speed for about 30 seconds or until blended.
  3. Add the butter and half of the egg mixture. Mix on low speed until the dry ingredients are moistened. Increase the mixer speed to medium and beat for about one minute to aerate and develop the cake’s structure. Scrape down the sides of the bowl.
  4. Gradually add the remaining egg mixture, in 2 additions, beating about 30 seconds after each addition to incorporate the egg and strengthen the cake’s structure.
  5. Scrape the batter into the prepared pan with parchment paper lined at the bottom of it and smooth the top with an offset spatula or the back of a spoon.
  6. Bake for about 55 to 65 minutes in a pre-heated oven at 175 degrees C or until the cake is golden brown and a toothpick inserted in the center comes out clean. If you find the cake browning too much as it bakes, cover with a piece of lightly buttered aluminum foil after about 30 minutes.
  7. Remove the cake from the oven and place on a wire rack to cool for about 10 minutes. Remove the cake from the pan and cool completely on a lightly buttered wire rack.

The Pound Cake can be covered and stored for several days at room temperature, for one week when refrigerated, or it can be frozen for two months.

It’s back to some simple home affairs cooking now that I am back and settled. How I surely wish my holidays can last as long as it was and I didn’t have to come back still ! Holidays are never too long to begin with and always too short to end. And being back means I can kick start my kitchen firing once more but I have been gearing up with a lot of steamboats recently to lessen the “guilt” that was indulged in during my trip earlier and also attempting to make it a point to eat healthier if that’s in anyway possible.

I still had a whole chunk of pictures to be compiled from the trip which I would really love to share here. Especially the cooking cum baking class that I have gone for. I really love the cosy ambience of the house from the instructor, her warm hospitality and detailed teaching, feeding me with lotsa information about their local foodstuffs and such. Till now, I am still having fond memories of it and perhaps that’s one of the greatest achievement unlocked during the entire trip. I shall work on the pictures soon and pen them down quickly before the memories weakened, I promised !!

Donkey years ago, I used to have had a little cafe that was jointly run with a partner. And I remembered our specialty has always been the Grilled Chicken Chop because it’s a little recipe that we have concoct over the years on how we loved it to be done. And if you make the extra effort to grind some ginger juice as marination for the chicken, I am sure the end result is a definite win-over. To spruce it up a little, a fragrant spicy dressing was also prepared this time to add that additional twinge of sweet savory spice to the dish. The chicken appears to be less “heaty” as compared to being eaten on its own and the extra dressing just make it perfectly to the bowl of rice as a gravy sauce idea too.

And remember I said I gonna make better use of my air fryer too ? This chicken chop is being air fried and the dressing is being stirred and mixed under a microwave too !! Imagine how effortless this dish turns out to be ~~ It’s simply loves, isn’t it ??

Brownie Butter Cake 布朗尼牛油蛋糕 – Eat What Tonight

Brownie Butter Cake_2I made a “life-changing” decision this week !! I finally made the move to step out of my comfort zone which I have been for the past 5 years and venturing into an unknown and risky environment which I am pretty much looking forward to though. A new job, new environment with new people, something which would have gotten me very paranoid if it was the past me. But having gone through many brinks of tussles and dramas over these few years has somehow made me stronger and firmer in my convictions in various ways. And this was also one of my 2017 resolutions fulfilled, hence it’s probably also the right time for me to move on.

I think I will miss some of the very nice people at my current workplace who would always love my bakes and finish them up in no time. LOL. And this is one of the recent bakes which make it to everyone loves. The thick luscious chocolate brownie topped with rich buttery cake served with a slight twinge of warmth is just beyond words.  Especially when a good baking chocolate with premium butter is used, the aroma that fills the dessert platter is irresistible.

The soft buttery cake helps to defuse some of the “sinfulness” of the chocolate brownie as having the brownie all on its own might seem a bit too much for my liking. The combination is just right, if not better. In fact, I love how the very dark or seemingly black color of the brownie being topped with the golden hue of the buttery cake. They made a good contrast in tones and definitely looks very appealing on display. So if you have any party baking to be considered, do give this a shot. I am sure your guests will certainly keep coming back for this awesomely flavorful cake.

Szechuan Styled Stewed Chicken Legs 川式焖鸡 – Eat What Tonight

Spicy, sweet and deliciously savoury is how I gonna described this dish. The sauce infused well into the chicken during the stewing and the thick luscious sauce makes a good gravy topping for the rice ! The mom even commented that the sauce is really good and she had it well with the rice alone, even without the chicken. 

I really wish I can be cooking on a full time basis nowadays.. LOL. But well, I think that’s quite far fetched a dream for me at the moment. So well, sometimes I quite envy those with a complete family where you can cooked for all your loved ones and seeing their satisfied tummies and happy faces at the end of the meal. Of course, I also understand everyone lives’ are different so if God has meant for me in a different note and going through an extraordinary path, I will take it in my stride and live on. Whether or not things will work out in my favour, I am not sure but as long as I press on, I believe things will definitely turn out for the better. So am trying to stay positive as much as possible !!

Spring Onion Ginger Fish Fillets 姜葱鱼片 – Eat What Tonight

Freaking warm weather is making my throat sore !! Hence, I was craving for something that’s really easy to savour, like perhaps some congee ? And with that, you know what I need ? Some really velvety Spring Onion Ginger Fish Fillets that’s boneless and with thick savoury gravy where you would need just a small serving of it to go alongside with the congee.

That’s my typical kind of comfort food anytime literally, is it yours too ? 🙂

And my favourite grocery supplier PurelyFresh, actually managed to de-bone and slice the fish upon my request and this makes all the job even easier than ever !! 

As the name implies, spring onion and ginger are basically the gist of the dish. However, I much prefer the fish’s texture to be smooth and velvety as well. And the core to this is to marinate the fish in some egg white and corn flour.

And blanching the fish in hot oil prior to cooking can actually prevents the fish from breaking up whilst stir frying thereafter too. You can also slice the fish more thickly to prevent that as well.

Spring Onion Ginger Fish Fillets 姜葱鱼片

Cuisine: Chinese

  • 400g fish fillets
  • 1 tbsp garlic, minced
  • 15 slices of ginger, soaked in 1 tbsp of shaoxing wine
  • 2 bunches of spring onion, cut into sections
  • some cooking oil
  • For the Fish Marinade:
  • 2 tbsp shaoxing wine
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 egg white
  • 4 tsp corn flour
  • ½ tsp pepper
  • For the Seasoning:
  • 1½ tbsp oyster sauce
  • ¾ tbsp light soya sauce
  • 2 tsp sugar
  • ½ tsp chicken powder
  • dash of pepper
  • 200ml water
  • Corn Flour Thickening : 2 tsp corn flour + 2 tbsp water

Easy Tuna Puff Pastry 金枪鱼泡芙 – Eat What Tonight

I am quite a big fan of puff pastry, but I only fancy those with savoury fillings such as curry, otah or tuna. And this puff pastry is really simple to put together. Preparation takes less than 15 minutes with a simple 5 ingredients thingy. And you get freshly baked Tuna Puff Pastry that’s deliciously piping hot from the oven. 

And this is really versatile. Instead of tuna, you can literally replace it with anything you fancy too. Cook it with some savoury chicken fillings and it will make a chicken pie while curry chicken potatoes make it a good curry puff. 

It is really easy to work around too. Simply cut puff pastry, top with fillings, cover another sheet of puff pastry, egg wash and pop them into the oven. In 15 minutes’ time or slightly more of baking time, a lovely hue of perfectly golden brown pastry is to be served !

And to make it stand out from the commercially sold crowds, I added some hard boiled eggs to the tuna and upped its tastiness with more shallots, japanese mayonnaise and a slight twine of lemony taste. It all turns out to be brilliantly good !!

Kam Heong Chicken / Fragrant Spicy & Sweet Chicken 甘香明鸡 – Eat What Tonight

Cooked this dish to go with congee on an ultra humid weekend !! Yes, it’s congee again for the umpteenth times  because that’s all is in the craving now !! So was looking for suitable dishes to go alongside with congee when I noticed this really simple and fuss free one, especially when I had the chicken air fried prior to stir frying, this makes everything so much easier too.

You may have heard of Kam Heong prawns or other kinds of seafood which is usually being called for in this dish. However, I gave it a slight twist and used it on a poultry instead. Because seafood would be too heavy a meal for a brunch, this Kam Heong Chicken makes all the sense to be presented and I really enjoyed how the blend of seasoning that comes about. Refreshing lemon juice blending with savoury oyster sauce and infusing with the dried shrimps, chilli padis and fragrant curry leaves. It’s a delightful combination I may say and the fact that I actually air fried the chicken instead of deep frying them prior to cooking makes this dish all the way healthier with much convenience too.

It’s a well mix of spiciness, sourness, sweetness and brilliantly savoriness in this dish. Yes, it’s a pretty much all in one there. The dried shrimps enhance the flavor whilst the curry leaves gives a further boost to the fragrance of the dish.
