Twice Cooked Pork Belly with Leeks 蒜香回锅肉 – Eat What Tonight

Happy Lunar New Year ! One of the must-have during a Chinese New Year is leeks which is always in abundance during the festive. As the Chinese saying goes, 过年要吃蒜,人人有钱算, there’s an auspicious meaning to having leeks during the CNY hence you will certainly see many people adding leeks to their basket during this season. The price tends to fluctuates as well, with it being the most reasonable when nearer to the actual day. I bought them at around $4.50 per kg few days prior with it going down to $3ish the day before reunion.

My family usually tends to enjoy roast pork with leeks but for a change today, I had this Twice Cooked Pork Belly with Leeks instead. I retain the pork belly water to cook it with the leeks thereafter and it makes the dish really fragrant. Leeks tend to shrink quite a fair bit upon cooking so what makes seems like a lot when you just add them into the wok might appear much lesser when they are cooked. So be sure to prep enough for the number of mouths you need to feed !

Fish Fillets in Spicy Garlic Sauce – Eat What Tonight

The official 2 days of the CNY is over in a blink of the eyes and with much of the hotpot ingredients leftover, I decide to use one of the item – the fish slices to come up with this Fish Fillets in Spicy Garlic Sauce. It has a very nice aroma with the use of garlics, chilies, curry leaves and evaporated milk incorporated in the sauce. What’s more the leftover fish slices are well marinated and deep fried prior to use which makes them very succulent.

Ingredietnts used

You can use any type of white fish slices for this whilst I work on white snapper fish slices that I had for the hotpot previously. You may be keen to ask if air-frying is possible instead of deep fry but generally deep frying will get the corn flour coated fish slices a more golden brown texture and colour than air-frying in this case. Hope this recipe can help to clear up some of your freezer or chiller space to use up all the leftover CNY ingredients so as not to waste any food.

Dry Mee Siam – Eat What Tonight

We often had the Mee Siam in its thick sourish, spicy gravy which makes it really appetising. You can find my cooked-from-scratch recipe here. Nevertheless, that’s also this dry version which comes without any gravy but instead having the Mee Siam flavours embedded in the stir-fry vermicelli itself. In the same sourish and spicy taste, but without any sauce and likened it to a similar dry-fried noodles instead.

An instant Mee Siam paste is used for this to cut some slack and speed up the process. And with an abundance of beansprouts and vegetables, it makes a very delish and appetising dish. What’s more the spice level can also be adjusted according to preferences and you are also free to top it up with any optional ingredients that you would like to serve it with.

Hope the sourish cum spicy-ness of the Dry Mee Siam can whet up your appetite and kick-start your day to enjoy this dish as a breakfast, lunch or even dinner option.

Pandan & Peanut Tang Yuan (Glutinous Rice Balls) in Ginger Soup

It’s the 7th day of the Chinese New Year which is known as 人日 and also the day where it’s everyone’s birthday. So Happy Birthday to All ! Most people will probably do a typical thing, that’s to gather around for another round of festive “Lou Hei” but for me, I find comfort in a warm and harmonious bowl of these homemade tang yuan in a soothing sweet ginger soup.

So my mum ask me how I manage to get the peanut fillings in without breaking the skin of the glutinous rice balls. And guess what’s my answer. Well I told her if you can’t get the fillings in, then you can always get the fillings out ! Another way of enjoying these mochi-alike tang yuan is to coat them in a mixture of crushed peanuts and fine sugar which is equally enjoyable !

Used pure pandan juice for these homely tang yuan without any artificial colorings and made them in mini sizes so that it’s easier to finish up and the warm ginger soup which was made from scratch as well taste really comforting too, especially when it’s pretty chilly these couple of days due to the constant rain !

Old Cucumber Pork Ribs Soup

If you are doing a traditional Cantonese style of Old Cucumber Pork Ribs soup, there will be a lot more ingredients to be included in this soup. Dried seafood such as dried squids or dried scallops will be included along with some other vegetables liked corn, carrots, etc to make it really comprehensive. However for some reason, I do not really liked dried squids in soup nor do my family. We usually like to keep our home-cooked soups really simple by including the core vegetable along with a poultry such as pork ribs or chicken and with a touch of salt and pepper as light seasoning.

Old cucumber is good as soups as they have a cooling effect which is especially useful now after all the CNY goodies indulgence. And coupled with its natural sweetness, just a little seasoning of salt and pepper is good enough to complete the soup as a dish on its own. I added in some honey red dates as well to give it a little more “colour” to the soup and top it with some wolfberries as well at the end of the cooking. But these are really optional.

The old cucumber was even sold really cheaply at 10 cents a piece around my hood just before the CNY which makes it really worthwhile to prepare this soup too.

Stir Fry Mee Sua Noodles with Shrimps

Mee Sua, a kind of rice vermicelli that is often cooked for birthdays and longevity is usually used for soups as the texture of this noodle is such that it will turn mashy if it’s cooked for long. But some people precisely liked it for such mashy-ness as it tends to blend well with the soup and you can eat the noodles even without using chopsticks.

So if you were to churn this into a stir fry, there will be an extra step of deep frying the Mee Sua in hot oil first, then loosen the noodles in boiling water before it can finally be used for stir-frying. As such, there tends to be very limited places that market this dish. But the texture of the noodles itself is very good after stir-frying and the Mee Sua is also very delicious after packing in the flavors from the seasoning.

The usual suspects in stir-fry noodles are often sliced mushrooms, beansprouts and some greens. So I further topped it with some shrimps today to make it more wholesome. As the Mee Sua are usually packed in individual bundles sold in a small pack or box, so it’s very easy to determine how much servings you need and have it cooked accordingly. Especially for someone liked myself who doesn’t have many mouths to feed, so it makes the food proportioning much easier to manage.

Sesame Oil Chicken & Mushroom Rice – Eat What Tonight

Now that most of us have started to return back to office for work, such one-pot meals cooked conveniently vis the rice cooker definitely made cooking over the weekdays more convenient and fuss free. Usually I prefer to pre-cook the aromatics separately first to bring out the flavours before stirring in the rice to let the rice cooker finish up the job. You can prepare everything quickly in 15 minutes once you reach home from work. And when the rice is cooking in the rice cooker, you can perhaps take a shower or do some cleaning up and once you are done, the rice would be readily done up piping hot in the rice cooker for you to enjoy.

The Sesame Oil Chicken & Mushroom Rice is very very fragrant and the aroma of it is clearly visible even when the cooking was done vis the rice cooker. Every bit of the rice is packed with the fragrance of the sesame oil and the chicken with the mushrooms all complement it well to pack it as a one bowl meal. Even the cleaning up is a breeze as there’s only the rice cooker to be washed thereafter.

Fried Egg with Braised Minced Sauce

Another easier homecooked which you can whip effortlessly in minutes in this Fried Egg with Braised Minced Sauce. Eggs is quite a staple in almost most of my meals so I try to innovate ideas on how to cook eggs with different recipes so that it doesn’t get too boring just by having fried eggs itself. With a little addition of this braised sauce, the eggs dish became really delicious and savoury and it was easily polished simply with rice.

Whilst I try to work on a more minimalist diet to reduce food waste, this dish definitely fits the purpose well as both the eggs and minced are common ingredients found easily in my fridge, the rest are the usual seasoning in most Chinese household pantries, so inevitably fulfilling the idea of a minimal yet satisfying meal. And if you are on a vegetarian diet, you can replace the meat based minced with plant based one and I am sure it will be equally good as well.

As I always say cooking unlike baking doesn’t require much skills but just need a good recipe, so I’m penning down this one good recipe here for records.
