Easy Cabbage and Mushroom Rice using Rice Cooker 简易高丽菜香菇饭

Hello !! I am finally penning down a blog post once again. LOL. Taking me ages to do it, isn’t it ? Actually I have been sharing quite often on IG recently, so if you wanna see what am I up to now, do remember to say HI over at IG ok ?

Actually this is an outdated recipe which I have posted on IG earlier, but for those who doesn’t IG, well don’t worry. I will still be updating this space of mine from time to time, for whatever recipes I’ve attempted.

And recently if you noticed my social media, I’ve also been sharing some cooking videos too. They are not so professionally done up, as they are filmed mainly using the mobile. But I guess it’s still alright for anyone who really wanna a quick glance on how to cook up certain stuffs. In time to come, perhaps when I have the luxury of time in my hands, I might get the real video camera, learn some video editing skills and share some real good videos ! Haha !! But in the meantime, please bear with this space and the mobile captures for the time being. Hopefully that can help to tide over whatever cooking crisis you might have.

This awesome Cabbage & Mushroom Rice is cooked using the rice cooker ! Basically it’s so noob cook friendly that you literally don’t need any skills to master. As long as you have a reliable rice cooker which I believe most of you should possess, all that you gotta do is to enjoy the fruits thereafter ! For this rice, I used roast pork which is store bought. However if you wanna attempt to make your own crackling roast pork, here’s one recipe for you too !

As you can see, I am always having ingredients that’s literally more than rice ! Haha !! That somehow makes me feel more contented as my tummy will be full with more of the ingredients that I liked rather than surviving on a whole lot of starchy rice. 

So here you go for this really awesome and simple recipe and if you liked to see how I’ve done it, here’s a little video clip embedded for your easy reference.

Easy Cabbage and Mushroom Rice 简易高丽菜香菇饭

 

  • ½ cup rice
  • 1 tbsp mushroom oyster sauce
  • ½ tsp light soya sauce
  • ¼ tsp dark soya sauce
  • ½ tsp sugar
  • 1 tbsp shallot oil
  • Pinches of pepper
  • Water used to soak dry shiitake mushrooms
  • 3-4 pcs dry shiitake mushrooms
  • Some sliced carrots
  • Some sliced roast pork
  • ½ of a small cabbage, sliced coarsely
  • Some parsley
  • Some fried shallots
  1. Combine rice, mushroom water, all the seasoning, mushroom, carrots and roast pork into rice cooker pot.
  2. Note: amount of mushroom water + all seasoning together should be slightly below the water mark for the amount of rice used
  3. Add the cabbage.
  4. Set rice cooker on normal plain rice mode (no quick mode!)
  5. When done, stir briefly to mix well.
  6. Garnish as desired and serve !

Braised Egg Dumplings and Cabbage Hotpot with Mizkan Yose Nabe Soup Base 红烧蛋饺和大白菜锅

Merry Christmas Eve to all ! Am pretty sure many of us are in an awesome holiday mood by now, so nothing beats gathering your loved ones and pals over for some lovely hotpot sessions. Moreover given the really cool weather recently, it makes the festive even more chilled than ever. With that said, how about some extraordinary hotpots with these lovely looking braised egg dumplings that’s cooked on a flavorful Mizkan Yose Nabe soup based packed with long cabbage and some longevity noodles for that extra goodness ?

Mizkan carries a varieties of soup bases which you can find easily from most major supermarkets locally, namely the Yose Nabe, Pork Bone and Soy Sauce Nabe and Sesame and Soya Milk Nabe.

Yose Nabe ~ Light base hotpot soup base with combination of four stocks – bonito fish, kelp, scallop and chicken.

Pork Bone and Soy Sauce Nabe ~ Made by adding vegetable soup and brewed soy sauce to slowly simmered pork bone and chicken soup.

Sesame and Soy Milk Nabe ~ Smooth, rich and mild flavored combination of chicken and kelp soup finished by adding sesame and soymilk.

Now if you have difficulty identifying which is which given the packaging are all in Japanese language, fret not. Here’s a simple way of identification. The black color packaging is the Pork Bone and Soy Sauce. Whilst the other 2 might look identical on the first instance, you can easily differentiate them from the word “豆” on one of them which literally is the Sesame and Soy Milk Nabe. And so the last one will be the Yose Nabe.

And we as Asians enjoy making dumplings on festive especially. However if the usual dumplings seem a tad too monotonous and common for your liking already, you can lift up the spirits by making these braised egg dumplings which is essentially made of an egg crepe wrapped in your desired dumpling fillings and cooking them in Mizkan hotpot soup base packed with long cabbage, noodles or any other ingredients that you fancy.

And if you intend to go for a vegetarian version, you can always replace the minced meat with some shredded cabbage which I think would be equally good too ! So here’s the recipe to share which is pretty simple.

Superior Double Boiled Chinese Cabbage Soup

Since Chinese New Year is approaching where everyone is whipping up their best dish, I thought I would share another lunar festive recipe again. The Chinese long cabbage is always in abundance during the lunar festival and most households will commonly stock up this vegetable, usually for soup broth in Pen Cai or just purely for hotpot purposes. And so with a little twist, I used it in a double boiled soup where the soup ingredients are wrapped and cooked within the cabbage itself. Thereafter the leaves of the cabbage are opened up liked a “soup bowl” which make it very presentable and pretty.

The gist of this dish itself is actually the presentation of the cabbage and soup at the end of it. While I had the soup ingredients with some of the common items that we often stocked up in the fridge liked mushrooms, carrots, chicken and meatballs, you are free to replace them with anything of your choice. Usually I preferred to incorporate the water that’s being used to soak mushrooms and scallops into the cooking itself as they are natural seasoning, so be sure to give them a rinse first before soaking them to use.

The “double boiled” in Chinese cooking also meant that the soup is steamed over 2 layers of segregation and in this case, the real soup bowl is one and the “cabbage soup bowl” is another. 2 hours is quite a bare minimum for double boiling over the stove but there are also ready electrical appliances in the market that caters to such usage which probably can shorten the time. Stir fry Instant Noodles with Cabbage and Luncheon

My typical kind of meal when I feel lazy and just needed something brainless. LOL. And whilst I thought the turnaround time for this will be quick, which is still the case but it wasn’t as fast as I had expected it to be because the “perfectionist” me decide to cook each and individual item of the noodles separately so that I can plate it better, I ended up taking a good 30 minutes for a 3-minute instant noodles. Hahaha ! Not to mention I had more plates to wash as well because the individual ingredients have to be placed separately too.

But I do love the combination of the dark soya sauce and sesame oil being tossed in the noodles which together with the sweetness from the vegetables and sodium-packed luncheon, it’s something that you won’t mind having again and again, just liked an instant noodles but a whole lot healthier since the noodles’ seasoning pack is not used.
