Easy Tuna Puff Pastry 金枪鱼泡芙 – Eat What Tonight

I am quite a big fan of puff pastry, but I only fancy those with savoury fillings such as curry, otah or tuna. And this puff pastry is really simple to put together. Preparation takes less than 15 minutes with a simple 5 ingredients thingy. And you get freshly baked Tuna Puff Pastry that’s deliciously piping hot from the oven. 

And this is really versatile. Instead of tuna, you can literally replace it with anything you fancy too. Cook it with some savoury chicken fillings and it will make a chicken pie while curry chicken potatoes make it a good curry puff. 

It is really easy to work around too. Simply cut puff pastry, top with fillings, cover another sheet of puff pastry, egg wash and pop them into the oven. In 15 minutes’ time or slightly more of baking time, a lovely hue of perfectly golden brown pastry is to be served !

And to make it stand out from the commercially sold crowds, I added some hard boiled eggs to the tuna and upped its tastiness with more shallots, japanese mayonnaise and a slight twine of lemony taste. It all turns out to be brilliantly good !!

Other than fresh ingredients, I get my all my canned products, including this tuna mayonnaise from PurelyFresh online as well because that jolly well saved me from all the heavy lugging of groceries all the way from retail supermarkets.

Easy Zebra Butter Cake 简易斑纹牛油蛋糕

I love traditional cakes that’s filled lusciously with rich buttery aroma. And butter cakes are nevertheless one of my most frequently baked favourites. To give the traditional butter cakes some twist, additional flavourings are incorporated which resulted in this Zebra Butter Cake. The name originates from the darker and lighter stripes patterns within the cake.

Even though I’ve baked butter cakes or pound cakes numerous times, but I realised there are still instances when that’s a denser layer of the cake appearing at the bottom of the cakes. Maybe some of you would have encounter this problem too at one time or another. I reckon this results from the butter not being beaten sufficiently till light and fluffy stage, hence the butter layer wasn’t allowed to expand properly, forming a denser layer at the bottom. 

With this cake, a whole slab of butter was used and beaten for a good while for at least 10 minutes till it appears very light in colour. Baked in a 9-inch round tin, the tall layer was baked adequately for 60 minutes (in my oven) and the cake was completely baked with very tender crumbs and texture. Compiled together is an additional hinge of chocolatety flavour which forms the darker stripes. 

And easy peasey is the making of this cake ! So here you go with the recipe ~~ 

Easy Zebra Butter Cake 简易斑纹牛油蛋糕

  • 125g plain flour, sifted
  • 125g cake flour, sifted
  • 2 tsp baking powder
  • 60ml milk
  • 20g cocoa powder, mixed with 2 tbsp of water

Easy Korean BBQ Pork 简易韩式炒肉片

This week has been real tiring because of daily hospital visits as the dad is back in hospital for hopefully the last surgery ever. Fortunately there’s a much deserved for mid week break. And because of that, I didn’t really have much time to prepare elaborate home cooked meals.

So I am really glad for such fuss free dish which greatly simplifies home cooking. Easy does it is the way and a home cooked can be beefed up in 10 minutes. It’s definitely worthwhile to invest in a bottle of such korean bbq sauce as they are very versatile and can used in a variety of dishes, especially for poultry.

I even marinade the pork slices with the sauce and set them overnight to allow the meat to absorb the flavours better. However, if you are in a tight constraint for time, marination can be skipped too with this sauce.

This is not a sponsored post though, but just a quick share on the type of bbq sauce which I’ve gotten. It’s infused with pineapple bits which I think is pretty awesome. I’ve also added a touch of spice with some hot pepper flakes and chillies.

If I have the luxury for more time, I will definitely serve all these on a BBQ griller and enjoyed them on a bbq steamboat, instead of stir frying like this. Nevertheless, this does not affect the flavour of the dish. Feel free to apply this sauce to any kinds of meat and I am sure you will enjoy them as much too !

Easy Korean BBQ Pork 简易韩式炒肉片

 

Recipe type: Main

Cuisine: Korean

  • 200g pork collar, thinly sliced
  • 1 tbsp cooking oil
  • ½ onion, sliced
  • 1 chilli, sliced
  • 2 tbsp Korean bbq sauce
  • 1 tbsp water
  • 1 tsp sesame seeds (for garnishing)
  • some spring onion, diced (for garnishing)
  • 2 tbsp Korean bbq sauce
  • 1 tsp sesame oil
  • ½ tsp sugar
  • ¼ tsp Korean hot pepper flakes
  1. Combine the pork slices with the marinade ingredients and set it overnight in the fridge.
  2. Heat up a work with the oil and add the sliced onions and chili. Stir fried till the onions become softened.
  3. Add the pork slices followed by 2 tbsp of Korean bbq sauce and 1 tbsp of water. Stir fried till the pork slices are cooked.
  4. Off the flame, garnish with sesame seeds and diced spring onions. Serve hot immediately.

1) Marination of the pork slices overnight is optional. If you are not doing this step, you can stir fried the pork slices and use the marinade ingredients plus 2 tbsp of Korean bbq sauce as seasoning during stir frying.
2) Try to use pork slices that has a reasonable amount of fats, such as pork collar or pork belly so that the meat will not turn dry even if it has turned cold.
3) Do not overcook the meat slices. Off the flame once they are cooked, otherwise they might turn hard.

Easy Seafood White Beehoon 简易海鲜白米粉

Just a quick post before I knock out for the day !! It’s Day 5 of CNY today. The long weekend is not long at all, too short and brief to be exact ! It’s like I was backed at work since yesterday already but the momentum is still not there yet. It’s slightly better today but still pretty much at gear 1 to 2 still. LOL. Wonders how long would it takes before I manage a full gear and really start the car moving ? ^-^ Well, you can called this the really typical life of a working class in Sg. Everyday counting down days and hours to the weekend. Erm, maybe I shouldn’t stero-type for everyone. It’s probably just me and people like me who work to live only. Haha !

Coming back to CNY, it’s been a good time of feasting for many of us, isn’t it ? For those who caved in on all the hotpot and steamboat affairs, I am sure there should be much seafood and soup stock leftover since as the kiasu people we are, would definitely stock up more in advance than what we would need. 

And this is a good time to play on this Seafood White Bee hoon to fully utilise all your leftovers ! Wasting food is a real pity, so as much as possible, converting unused ingredients to new dishes has always been a good exploration at least to me. So with the home made soup broth, and the prawns, squids, scallops, abalone and fish slices from the hotpot, together with vermicelli, this makes a very yummy Seafood White Beehoon which is selling for anything not less than $10 commercially. And with the abundance of seafood you have, it’s probably going to cost much more to dine for this meal at the restaurants or even the hawker stalls.

So nothing’s better than to prepare this from home, where you get to prepare a huge portion of it at a fraction of the cost, and since the seafood and soup broth are already available in possession from the CNY leftovers.

In fact, I coded this as the “cheat” method to concocting this dish, making it as simple and fuss free as possible, but not comprising the taste in big difference. I like it for the fact that the freshness of the seafood and the home made soup broth comes together and makes it a very delicious dish, with very minimal seasoning.

Easy Seafood White Beehoon 简易海鲜白米粉

 

Recipe type: Main

Cuisine: Chinese

  • 1 tbsp cooking oil
  • 1 tsp minced garlic
  • 300ml chicken stock/broth (I used home made, you can use store bought too but do adjust with more water accordingly as store bought one tends to be more salty.)
  • 300ml water
  • 1-2 servings rice vermicelli or beehoon (no pre-soaking required)
  • 3-4 pcs prawns
  • ½ squid, cut into rings
  • 3-4 pcs scallops
  • some fish slices
  • some abalone slices (optional)
  • some green vegetables
  • 1 egg, beaten
  • ½ tsp fish sauce
  • Salt & pepper to taste (if necessary)
  • 1 tsp shaoxing wine
  • ½ tsp sesame oil
  • ¼ tsp pepper
  • ½ tsp salt

The taste/smell of fish sauce can be overwhelming for some, so adjust accordingly to individual preferences.

Easy Cabbage and Mushroom Rice using Rice Cooker 简易高丽菜香菇饭

Hello !! I am finally penning down a blog post once again. LOL. Taking me ages to do it, isn’t it ? Actually I have been sharing quite often on IG recently, so if you wanna see what am I up to now, do remember to say HI over at IG ok ?

Actually this is an outdated recipe which I have posted on IG earlier, but for those who doesn’t IG, well don’t worry. I will still be updating this space of mine from time to time, for whatever recipes I’ve attempted.

And recently if you noticed my social media, I’ve also been sharing some cooking videos too. They are not so professionally done up, as they are filmed mainly using the mobile. But I guess it’s still alright for anyone who really wanna a quick glance on how to cook up certain stuffs. In time to come, perhaps when I have the luxury of time in my hands, I might get the real video camera, learn some video editing skills and share some real good videos ! Haha !! But in the meantime, please bear with this space and the mobile captures for the time being. Hopefully that can help to tide over whatever cooking crisis you might have.

This awesome Cabbage & Mushroom Rice is cooked using the rice cooker ! Basically it’s so noob cook friendly that you literally don’t need any skills to master. As long as you have a reliable rice cooker which I believe most of you should possess, all that you gotta do is to enjoy the fruits thereafter ! For this rice, I used roast pork which is store bought. However if you wanna attempt to make your own crackling roast pork, here’s one recipe for you too !

As you can see, I am always having ingredients that’s literally more than rice ! Haha !! That somehow makes me feel more contented as my tummy will be full with more of the ingredients that I liked rather than surviving on a whole lot of starchy rice. 

So here you go for this really awesome and simple recipe and if you liked to see how I’ve done it, here’s a little video clip embedded for your easy reference.

Easy Cabbage and Mushroom Rice 简易高丽菜香菇饭

 

  • ½ cup rice
  • 1 tbsp mushroom oyster sauce
  • ½ tsp light soya sauce
  • ¼ tsp dark soya sauce
  • ½ tsp sugar
  • 1 tbsp shallot oil
  • Pinches of pepper
  • Water used to soak dry shiitake mushrooms
  • 3-4 pcs dry shiitake mushrooms
  • Some sliced carrots
  • Some sliced roast pork
  • ½ of a small cabbage, sliced coarsely
  • Some parsley
  • Some fried shallots
  1. Combine rice, mushroom water, all the seasoning, mushroom, carrots and roast pork into rice cooker pot.
  2. Note: amount of mushroom water + all seasoning together should be slightly below the water mark for the amount of rice used
  3. Add the cabbage.
  4. Set rice cooker on normal plain rice mode (no quick mode!)
  5. When done, stir briefly to mix well.
  6. Garnish as desired and serve !

Easy Stir Fried Leek 简易蚝油炒蒜

Leek is one of my favourite vegetables but a pity it’s quite a seasonal vegetable in Singapore. We get to see leek most oftenly during Chinese New Year locally. And that’s the only time where the leek tastes the best too.

In Mandarin, leek is called 蒜,which has the same pronunciation as 算 which translate to “count” in English. So it has an auspicious meaning of counting money, which literally means fortune. 

It’s pretty simple to cook leek. You only need to take note to cut it diagonally and the best parts of it is actually the white parts of the leek which is the most fragrant. If you are a meat eater, you can stir fried it with some roast pork which will greatly enhance the dish.

If you are a vegan, a simple stir fried of it with some mushroom sauce and chilli padi makes it an all good to go. This current version is a simple stir fried with oyster sauce and chilli and it was already good enough for me. Had shared this previously in IG already, so here I am documenting it down on this blog.

Hopefully I can still find some nice good leeks available now even if it’s not the CNY now. Enjoy !

Easy Fluffy Scrambled Eggs – Eat What Tonight

Many scrambled eggs uses milk to get that fluffiness and creamy texture. But I usually love mine without milk and this is great for those who are lactose intolerant too !

To achieve the same creamy and fluffiness, I usually beat the eggs with chopsticks till they turn slightly paler in yellow and cook it a few quick stirs with melted butter. It tastes marvelous good as well !

It’s really simple, so give it a go and let me know if you like it with or without the inclusion of milk then !

Easy Pizza Toast – Eat What Tonight

If you have noticed my IG feed, you would have realized that I am actually quite a toast or sandwich lover. I love that slight crispy edges on toast alongside with overflowing warm melting cheese on it. So I’ve been enjoying my toasts with several kinds of toppings or fillings that range from ham, bacon, tuna, corns, egg to otah. Much of it are my favorites to go on toasts.

And one of the absolute must have on a good toast will be the cheese. I’ve been using The Laughing Cow cheese for sometime and I must say the cheesiness and melting effect of the cheese is excellent. Very often that not, I will be using the Cheese slices for most of my toasts which you can simply tear them into pieces and spread them all over if you are making an open top toast like the Pizza toast that I’m having right now.

The Laughing Cow carries an assorted range of Cheese slices that goes from toast, sandwich to burger and light variations, which is really awesome because you can decide on the kind of cheese necessary for whichever purposes. Easy Yee Mee Noodles Soup

Loved this super easy and fuss free yee mee noodles soup because it’s packed with a collagen loaded home cooked soup base. Recently I started to make my own soup stock again using pork big bones, chicken feet, chicken carcass and simmering it over the gas stove for 5 hours, which is not my longest for the records though. My longest was liked 10 hours and there was when the chicken feet and carcass totally dis-integrate into the soup and turns all collagen-ally milky white.

But for this time, I actually halved the time because I started off late in the day. Nevertheless, it was still good as a soup base. All I did was some light seasoning of the soup with a touch of shallot oil and salt and pepper to taste. Added some minced meat and lots of green vegetables and further topped with a beaten egg and fried ikan bilis. As simple as it gets but as delicious as it can !

I am a big eater of noodles so I really enjoyed anything relating to noodles. And this yee mee noodles is one of my favorites. In fact, it goes on very well with fish soup too. And with a ready home cooked stock, this meal is easily beefed up in less than 20 minutes. Just slightly longer than instant noodles but much healthier and no MSG !

Easy French Toast 简易法式吐司 – Eat What Tonight

I used to remember pigging into these easy french toasts for supper whenever the hunger pang strikes in the middle of the night. And my mom used to tell me their traditional way of making such toasts is simply coating the bread with egg and pan frying them with cooking oil. Perhaps I was influenced in such a way, I tend to favor these pretty “Chinese style” of french toasts literally than the English way where milk is included.

But I reckon that the difference is actually very insignificant and for those who are lactose intolerant, I guess this easy version will probably appeal to you better too. And I usually enjoy my french toasts with either slabs of butter, golden syrup, kaya jam or cinnamon sugar, which more on the sweet side I would say.

The old school way kicks in this time and so I had them with some kaya jam which was really awesome. Hopefully you will enjoy this easy french toast as much as I do too.
