This is a kind of braised fish that we had often during reunion dinners. Now don’t ask me why during reunion, perhaps that’s one kind of fish that the old folks like to prepare during such festive. Deep fried a pomfret before dunking it with some savoury braised sauce. And since I had a pomfret on hand and was quite bored of the usual way of just steaming it, it suddenly dawn on me that I can cook it this way too.

And this type of fish actually goes very well with some Teochew mui (porridge). Especially during this rainy season where everyday is just so chilling. The braised sauce is a perfect fit for the porridge and the fish itself can make a wholesome meal by itself.

Been freaking tired recently that I do not even have the time to start on the new theme for the blog which I have mentioned in a blog post earlier. The colleague was just reminding me of it the day before ! Well, I do have plenty of ideas going but just lacking of time for execution though. Please bear with me for awhile more !! Village Style Braised Fish with Fermented Black Beans 乡村黑豆豉焖鱼

 

Recipe type: Main

Cuisine: Chinese

  • 1 pc pomfret (preferably black, but since I only have the white on hand so I used that)
  • 5 thick slices old ginger
  • 1 chilli, sliced
  • 2 shallots, sliced
  • 1 tbsp fermented black beans
  • 3 garlics, sliced
  • 1 tbsp corn flour (for coating)
  • dash of salt
  • some cooking oil
  • 2 tsp oyster sauce
  • 1 tsp sugar
  • 1 tsp dark soya sauce
  • dash of pepper
  • 300ml water
  • dash of salt
  • 1 sprig spring onion, sliced
  • 1 red chilli, sliced

Golden Tofu with Fermented Black Beans & Minced Meat 黄金豆腐黑豆豉肉碎

I began to realise that many of our traditional home cooking often involves a certain degree of fermented condiments to spruce up the dish. And recently, I am starting to be quite “obsessed” with using fermented black beans in my cooking too ! LOL. Ever since my mum told me that adding a bit of these dry beans can make the dish feel more tasty, I have been trying it on several different dishes and indeed I do agree with her. I think mum and me do share similar taste buds in certain ways now because all the while, we have always been quite different when it comes to food.    

And one small pack of such beans costs less than a buck. While some people do mention that they will soak the beans prior to cooking, but I actually do not. Because the fermented black beans are in dry version, hence I feel that they should be used as it is. Of course, we shouldn’t be adding too much of it as it’s very salty in nature. But adding a dash or two of it to a dish will definitely enhance the overall taste of the dish.

Combining the beans with a little spice will also add to the good flavour of the dish and sprucing it up with some colours as well. And this time, I had the fermented beans cooked with egg tofu and some minced and I have to say, the dish was so appetising that the entire plate was polished up in no time. The savouriness of it all makes a good complement with a plain congee or rice in particular.

Golden Tofu with Fermented Black Beans & Minced Meat 黄金豆腐黑豆豉肉碎

  • 1 pc egg tofu, sliced thickly
  • 1 tbsp cooking oil + more for deep frying the tofu
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • ¾ tsp dry fermented black beans
  • 1 chili, diced
  • 100g minced meat
  • ½ tbsp oyster sauce
  • ½ tbsp dark soya sauce
  • 100ml stock
  • 100ml water
  • ½ tsp chicken powder
  • some spring onion, diced (for garnishing)
  • For Thickening:
  • 1 tsp corn flour + 1 tbsp water

Fermented Black Bean Oyster Chicken 豆豉蚝油鸡丁

The earlier posting on cooking with fermented black beans with golden tofu was quite a hit, so here’s me embarking on another one, this time with air fried chicken. This is a very convenient dish, especially if you are packing it for a lunch box meal like what I’ve done. Boneless chicken is used, hence making it a very versatile lunch box dish where you can polish up your meal easily, since that’s no bones.

There are certain food which might not make it suitable for including into your lunchbox because of the way the food has to be consumed. Hence, as much as possible, when I am thinking of ideas for a quick prep meal especially on a weekday night or lunch box affair, I tried to incorporate easy ideas for a fuss free cooking. 

But I am getting quite tired of the usual style of kong po, black pepper or even spring onion dishes. Hence, for some versatility, I made this dish which I feel is pretty awesome for a change from my usual meals and fermented black beans, as I mentioned earlier makes everything all the better. 

To give the dish a bit more cheer, I included 3 colours of bell peppers and even coarsely crushed the fermented black beans this time to bring out the flavour more. As far as I understand, most of what we saw that’s sold commercially cook fermented black beans as a whole by themselves so that the dish looks more presentable. However, I do realised that slightly crushing the beans coarsely makes the dish more fragrant and because they are finer in size already, they gets incorporated into the flavour of the dish better. Well, that’s my humble opinion and you are free to try and determine if we think the same !

  • 2 pcs boneless chicken leg, diced
  • ¼ onion, diced
  • ½ red capsicum, diced
  • ½ yellow capsicum, diced
  • ½ green capsicum, diced
  • 2 tsp fermented black beans, crushed
  • 1 tbsp chopped garlic
  • 1 tbsp cooking oil
  • 1 tbsp light soya sauce
  • 1 tbsp shaoxing wine
  • 1 tbsp corn flour
  • ¼ tsp sesame oil
  • dash of pepper
  • 1 tbsp oyster sauce
  • ½ tbsp shaoxing wine
  • 1 tsp sugar
  • 100ml water
  • 2 tsp corn flour + 2 tbsp water (mix together)

Fermented Black Beans With Minced Meat 黑豆豉炒肉碎

Have been sick for the past week and was trying my best to go on a light diet as much as possible. And it was only until yesterday that I attempted to eat some rice again. Prior to that, it was pretty much soupy, congee or porridge. Hence, to make my meals more appetizing, I tried to locate dishes that I could go along with the plain congee so that it could lift up my appetite and spirits. So one of such dishes is the Fermented Black Beans with Minced Meat.

In fact, this is such a simple and homely dish that could be done up in probably less than 15 minutes. But it was so tasty and went on so well with a plain congee that I actually finished up the entire plate all to myself. It gives the otherwise bland and bitter taste buds from the medication such a boast that I felt hearty and warm immediately after the meal. 

Whenever I have Teochew mui (congee), my favourite dishes are pretty standard. It’s either the Sesame Oil Chicken, Stir fried cabbage that have been simmered till tender and soft like the one below, any kinds of cooked eggs or this particular Fermented black beans with minced meat dish. These are old school kinds of home cooked dishes that never fails to delight and make one feels much at home. 

Whilst these are generally not difficult to stir up dishes, they make such good homely affairs meals that could go along with a plain rice or porridge. Though I learnt that some people will actually include tomato sauce into this dish, I find that this is essentially not necessary. With an appropriate amount of fermented black bean and some spice from the chili padi, this dish is ideally all good to go.

Finally, I am embarking on a short trip to Hong Kong once again ! It will be another no frills, no itinerary trip once more for the purpose of it all is just to chill and relax, hence doesn’t want to fuss myself too much over a disciplined itinerary to stick to. In the meantime, enjoy this humble and homely dish as the cooling year end weather makes congee and porridge meals very appropriate for the season.

Fermented Black Beans With Minced Meat 黑豆豉炒肉碎

 

Recipe type: Main

Cuisine: Chinese

  • 150g minced meat (pork / chicken)
  • 1½ tbsp fermented black beans paste
  • 1 chili padi, diced
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • ¼ tsp dark soya sauce
  • 100ml water
  • 1 tbsp cooking oil
  • some sugar (optional)
  • some spring onion, diced (for garnishing)
  1. Heat up a wok with the cooking oil. Stir fry the minced garlic, ginger and chili padi until fragrant.
  2. Add in the fermented black beans paste and saute briefly to mix well.
  3. Add in the minced meat and stir to mix well.
  4. Add the water and dark soya sauce and simmered till the water boils. Taste and adjust with some sugar if you find it too salty for your preference (as different brands of fermented black beans may differ in saltiness. However, I did not add in any as I find mine was relatively ok for my liking.)
  5. Off the flame and garnish with some diced spring onion. Serve hot with congee or rice.

Fermented Black Bean Chicken with Tri-Color Capsicums

Ever since my mum introduced me to using these dry fermented black beans, I’ve been using and cooking them up more often than the bottled fermented black bean sauce. One thing is that the dry beans can be readily stored for a longer period of time and secondly, I can adjust the savouriness of the seasoning sauce more easily according to my own preferences.

Fermented black beans goes on well with many Chinese dishes, such as noodles, fish, chicken just to name a few. Whilst some may detest the raw smell of it, but the awesome flavors they bring to the noodles and meat once they are cooked would probably just make you crave for more there and then.

So here’s to sharing the recipe for this Fermented Black Bean Chicken with Tri-Color Capsicums which not only goes on really well with a simple rice or porridge, but also served well as an ideal one-plate dish especially if you just need to cook for yourself and looking for something simple and fuss-free.
