This dish actually comprises of a few cooking methods. First of all, I have to marinade the pork ribs, then deep fried them to seal in the flavours, then braised it to tenderness and thereafter baked it in the oven to achieve the slight grilled texture.

But as people always say, patience counts, so with all the efforts that was put in, you are bound to get yourself a real appetising dish at the end of the day for all the hard work that was put in !!

Although the name of the dish seems like a Western meal, but with all the ingredients and cooking methods, I would tend to think it’s more of a chinese dish instead. Furthermore, if you do watch those Hong Kong channels on cable like me, the first time I saw this dish was during those timings in between the shows. They would introduce some short recipes to fill up the time gaps when one show has ended and the time for the next one has not come. As most of the recipes introduced were generally chinese or hong kong dishes and this happens to be one of those, it pretty much conforms my understanding henceforth.

But because it also comprises of a variety of cooking methods, the end result is a very flavoursome dish that’s happily satisfying, at least to me !!

Pork ribs have been one of my “have-to-order” items from PurelyFresh on almost every occasion. I liked the versatility of how pork ribs can be used in the everyday cooking. And even if you have completely zero idea on how to use them, a simple ABC kinda soup with pork ribs can suffice adequately too !

  • 500g pork ribs
  • 2 potatoes, cut into small pieces
  • 1 onion, coarsely sliced
  • 4 shallots, minced
  • 4 garlics, minced
  • 10g butter
  • some cooking oil
  • 1 tbsp light soya sauce
  • 1 tbsp corn flour
  • 2 tsp sugar
  • ½ tsp pepper
  • ½ tsp baking soda
  • 1 tbsp tomato sauce
  • 1 tbsp curry powder
  • ¾ tsp salt
  • 1 tsp sugar
  • 250ml stock / water

It’s back to some simple home affairs cooking now that I am back and settled. How I surely wish my holidays can last as long as it was and I didn’t have to come back still ! Holidays are never too long to begin with and always too short to end. And being back means I can kick start my kitchen firing once more but I have been gearing up with a lot of steamboats recently to lessen the “guilt” that was indulged in during my trip earlier and also attempting to make it a point to eat healthier if that’s in anyway possible.

I still had a whole chunk of pictures to be compiled from the trip which I would really love to share here. Especially the cooking cum baking class that I have gone for. I really love the cosy ambience of the house from the instructor, her warm hospitality and detailed teaching, feeding me with lotsa information about their local foodstuffs and such. Till now, I am still having fond memories of it and perhaps that’s one of the greatest achievement unlocked during the entire trip. I shall work on the pictures soon and pen them down quickly before the memories weakened, I promised !!

Donkey years ago, I used to have had a little cafe that was jointly run with a partner. And I remembered our specialty has always been the Grilled Chicken Chop because it’s a little recipe that we have concoct over the years on how we loved it to be done. And if you make the extra effort to grind some ginger juice as marination for the chicken, I am sure the end result is a definite win-over. To spruce it up a little, a fragrant spicy dressing was also prepared this time to add that additional twinge of sweet savory spice to the dish. The chicken appears to be less “heaty” as compared to being eaten on its own and the extra dressing just make it perfectly to the bowl of rice as a gravy sauce idea too.

And remember I said I gonna make better use of my air fryer too ? This chicken chop is being air fried and the dressing is being stirred and mixed under a microwave too !! Imagine how effortless this dish turns out to be ~~ It’s simply loves, isn’t it ??

  • 2 stalks coriander stems, minced
  • 3 chili padis, minced (or more if you desire more spicy)
  • 1 tsp minced garlic
  • 2 tbsp ginger juice
  • 1 tbsp hon mirin
  • 1 tbsp jap cooking wine
  • 1 tsp light soya sauce
  • ¼ tsp pepper
  • 1 tbsp dark soya sauce
  • 1 tbsp sweet soya sauce / kecap manis
  • 2 tbsp hon mirin

Grilled Mixed Mushrooms with Sesame Sauce 芝麻酱烤香菇

I have always love a touch of Japanese sesame sauce in my salads as compared to the usual salad dressing. However, very often that not, when we buy a bottle of sesame sauce as dressing for our salads, there will often be quite a fair bit of leftover because we only use a few spoonfuls each time. So what should we do with the balance sauce, if you may ask ?Well, other than cooking it with fish, as you may see from my recipe here, I also grilled some mixed mushrooms and added a touch of the sesame sauce with it this time. I enjoyed how the tenderness of the shrooms gets infused with the sesame sauce and creates an all new taste all together. The Japanese, as we all knew are renowned for their quality standard in their food ingredients. Mizkan, in particular, a long established brand in the industry, has well maintained their market leader status in the food industry market because of their consistency in quality and standards. Using one of their most popular items to date being the bottled sesame sauce, which encompasses a rich and luscious sesame fragrance made wholesomely from freshly grind sesame seeds, this simply fuss free dish makes a good appetiser or a comforting side dish in 15 minutes !I liked to address this as a wholly Mushrooms salad, which serves as a comforting deviation from our usual standard greens especially since it is served warm. And to top it up, I added some optional capsicums as well to brighten up the dish too !So if you are a mushrooms lover too, do give this a shot as it not only helps to clear up the balance sesame sauce sitting around, it also beefs up a fresh appetiser which you are unlikely to enjoy anywhere else ! That’s what killing two birds with one stone means !

Grilled Tom Yum Squids 东炎烤苏东

It’s the first day of October, which marks the beginning of the last quarter of the year ! And so, I decided to blog a new post as well to keep the blogging momentum going. 

Grilled sambal stuffs are very much one of the local delights in our night hawkers, such as grilled stingray, squids, seafood, etc. But their prices have constantly been quite pricey even though they are hawker foods. I recalled that my favourite grilled bbq stall has its minimum price raised from 8 to 10 to now 12 bucks. 

Deciding to dine out less often and cooked more at home too, I would love to re-create all kinds of my favourite hawker delights as much as possible too. So last weekend, I grilled this Tom Yum Squids on a banana leaf from my stove top. This dish is a 100% no brainer which will yield a 100% success. Simply marinate the squids with the ingredients stuffs and grilled them on a banana leaf for the ultimate aroma. 

I reckon you can do this 100 times and you will still keep loving this dish, like how we never fail to enjoy a grilled bbq stingray or seafood for a night dinner or supper whenever we patronise the Blk 85 Bedok North or Chomp Chomp food centre. So other than Grilled sambal stuffs like my other recipe here, this Grilled Tom Yum Squids is in no way less inferior. In fact, I much adore this dish better than sambal now because it has an added twinge of sourish and refreshing after taste in comparison.

Grilled Tom Yum Squids 东炎烤苏东

 

Recipe type: Chinese

Cuisine: Main

  • 1 squids, cut into rings
  • 1 pc banana leaf
  • 2 tbsp cooking oil
  • 1 lime, cut into half
  • 1 tbsp tom yum paste
  • 1 lemongrass, sliced
  • 1 ginger flower, sliced
  • 3-4 shallots, sliced
  • 1 chilli, sliced
  • 1 tsp sugar
  1. Combine the squids rings together with the marinade ingredients. Mix well all together and set aside in the fridge for at least an hour.
  2. Add in 2 tbsp of cooking oil in a wok and place a banana leaf on top.
  3. Place the marinated squids on the banana leaf and grilled till all are cooked. Add more cooking oil if the banana leaf is burning out too fast.
  4. Transfer the squids on banana leaf to a plate and serve with lime immediately.

You can replace the squids with fish or other seafood of your choice too ! Adjust grilling time accordingly as such.

Szechuan Bean Paste Grilled Fish 四川辣豆酱烤鱼

A late Happy New Year to all !! LOL. Took a blogging break during the crossover and am pretty much happy to be back in action once more. Well, you can still find me on IG at @eatwhattonight and Facebook, sharing recipes there and then, when I am really lazy to on the laptop. Especially after facing a day’s work at the computer screen, my evenings are starting to become so precious now.

Nevertheless, this is still a platform where I wanna seriously document down what I’ve tried in the kitchen thus far, as it is far easier to search for any single recipe should I looking for one.

Supposedly to be resting in bed too now, because am down with a bad flu once again. Sigh. It seems that the health is really taking a toll on me in the recent months. Guess I am really getting old !! So I had better make sure my 2018 resolutions have to be accomplished, so that I can live life to the fullest !! LOL.

Ok I know, a whole lot of nonsense babbling there. Let’s come back to the real food stuffs. I don’t is it because I am sick, the craving for food which I shouldn’t be eating now seems to be greater than usual. LOL. So that’s this Szechuan Bean Paste Grilled Fish which I attempted previously after Mom gifted me with the yellow strip fish which is pretty much decent for one to two pax.

I fused it with a blend of Szechuan peppercorns and spicy bean paste and had it grilled on banana leaves. It’s not difficult to imagine, isn’t it ? The aroma of the peppercorns, infused with the spice from the bean paste together with the banana leaves, that’s quite a wholesome grilled thing. In fact, I believe many of us should already know that anything to serve or grill on banana leaves are given that extra aroma as compared to when you are just purely grilling food by itself.

But to ensure the banana leaves doesn’t get burn out easily yet having to ensure the fish gets cook quickly, you need to splatter quite a fair bit of oil which might makes the dish pretty oily. To eliminate that, I pre-steam the fish before having it on the grill for a couple more minutes. The fish gets cooked, the aroma from the grill stays and the banana leaves doesn’t get burn out.

So here’s to sharing this simple and fuss free recipe which I hope I can get to eat this once again when I am recovered !! So shooo away, bad virus !! LOL.

Szechuan Bean Paste Grilled Fish 四川辣豆酱烤鱼

 

  • 1 fresh whole fish, anything of your choice fit for 1-2 pax (adjust the following accordingly if you are having a bigger fish)
  • 1½ tbsp spicy bean paste
  • 1 tsp sugar
  • 1 tsp Szechuan peppercorns, crushed coarsely
  • ½ ginger flower, sliced
  • 1 thumb size ginger, sliced
  • 2 tbsp oil
  • 1 pc banana leaf
  1. Make a few slits on the fish on both sides. This is to ensure that the fish gets cooked evenly.
  2. Steam the fish on high heat for approximately 10 mins.
  3. Transfer the fish on top of the banana leaf with a plate underneath (in case the leaf breaks).
  4. Place/rub all the rest of the ingredients except the oil, all over the fish.
  5. Heat up a grill pan with 2 tbsp of cooking oil. Place the banana leaf with the fish in it and grill on both sides for around 4 minutes.
  6. Garnish as desired and serve hot with rice.

Pan Grilled Barramundi Fish With Lemon Garlic Butter Sauce

Hoola ! Finally I get down to penning another recipe again ! This time I actually pan fried barramundi fish belly from Kuhlbarra and coat it with a lemon garlic butter sauce. Though the name is seemingly long, but it’s actually quite simple to beef up. And since the barramundi fish belly is already succulent by itself, the sauce actually complements the fish by giving the entire dish a very refreshing and tantalizing after taste.

And since this is kinda a western dish, so I thought I would cooked up some spaghetti pasta to go along with it too. And indeed, everything pairs up nicely as an appetizing meal. The barramundi fish belly is high in collagen and omega 3, hence it has a very smooth texture due to the high fats contents.

Pan frying of this fish with some olive oil is excellent as it retains the natural taste and freshness of the fish well. I love the fact that this is so straightforward in preparation and cooking that it was served up easily in 20 minutes.
