It’s finally the last working day of the week ! Although it has been a short working week for me, but it was still a tiring one, considering that I had spent most of the off days in the hospital again. So I guess I really need to de-stress myself, and cooking and retail therapy is hard at work now !! LOL.

It’s the double 11 day today where online sales are going like frenzy. I always thought that double 11 is a symbolic day for couples, since it sounded like 一心一意 or 全心全意 that kind of verses. And what’s more many couples like to tie the knot on such days as well. But someone actually wished me a “Happy Singles Day” today which dawned on me that, it’s actually a day for singles as well ! LOL !! No wonder all the online platforms are going on huge sales discounts. For couples, they find all the reason to shop for each other on this special day, for singles it’s a day to splurge on yourselves to “commemorate” the day ! Hahaha !! All the marketing gimmicks and all sorts of excuses for retail therapy all right !!

Regardless of which, it’s still a great day to shop shop shop and shop !! I have my fair share of online shopping already. Have you had yours too ? Hehe !! Friends always say I am “evil” because I always encourage them to buy buy and buy things. Better to get it than have regrets later and then keep harping on it right ? 😀

Ok, let’s hop back to the Lemon Garlic Chicken. It’s a very refreshing dish as the tangy taste of the lemon paired with savoury garlics and tad of sweetness together with ginger juice makes an ideal combination. And pan frying it with olive oil adds the extra fragrance all together. Fresh boneless chicken thighs from PurelyFresh online is best used for this dish !

Lemon Garlic Chicken 柠檬蒜蓉鸡

  • 4 pcs of boneless chicken thigh
  • 1 tbsp olive oil
  • 1 tbsp light soya sauce
  • 2 tbsp ginger juice (grate some ginger and squeeze out the juice by hand)
  • 1 tbsp hon mirin
  • 1 tbsp sugar
  • 1 tbsp lemon juice
  • 2 tbsp minced garlic
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp pepper
  • 1 tsp paprika powder
  • Some shredded parsley
  • Some chilli flakes
  • Some lemon slices

Spicy Lemon Hotplate Scallops 酸辣铁板扇贝 – Eat What Tonight

Today marks the first post I am penning down for 2017. As much as I wanna this year to begin on a good note like everyone else, but I am quite saddened that I, or in fact the whole family crossed the new year in a hospital. For those who knew me well, the fact that my dad was down with pancreatic cancer 3 months ago came as a shock to everyone of us. As much as we want to embrace this fact with acceptance and positivity, but the constant emergency admissions to the hospital has definitely withered us much. And it is with a heavy heart to think that he’s being warded through the new year with complications as well. Though we are still unsure what lies ahead, but I really hoped that the upcoming surgery can give us the much sought after relief that everyone is hoping for.

Strong as I may seem, but in fact, these are the times when the mind gets really challenged. It wasn’t easy for me to come out from a very tough trial previously and to know that I am undergoing another one now is indeed defeating. As much as I am using all ways to de-stress myself, but the constant worry and fear is nothing short of traumatising.  So with the beginning of a new year, I do pray for strength and courage to be able to brave through this storm and eventually comes out of it as a stronger being.

And really sorry to say that postings might be very slow from now on as I haven’t been really cooking or baking for quite awhile as everyone in the family has been feeling very jittery as the date draws closer to the surgery and no one has the appetite to wanting to eat. But having pen this down in words, it somehow gave me some relief as an avenue to vent out the stress and trauma that was went through. This dish is in fact one of the last dish that I have prepared for the family before my dad’s condition worsened.

And I hope that there can be more of such opportunities for me to whip up nice food for the family once again when the whole trauma is over.

Spicy Lemon Hotplate Scallops 酸辣铁板扇贝

 

Recipe type: Main

Cuisine: Chinese

  • 8 pcs fresh scallops, pat them with paper towels till very dry
  • ½ chilli, sliced
  • ½ green pepper, sliced
  • ½ onion, sliced
  • 1 tbsp hon mirin (japanese sweet vinegar)
  • ½ tsp salt
  • 2 tbsp water
  • 2 tbsp cooking oil
  • some freshly ground black pepper
  • 1 tbsp lemon juice
  • 1 tsp sugar
  • rind of 1 lemon
  • ¾ tbsp cooking oil
  • 1 tbsp Japanese cooking wine

Lemon Chicken 柠檬鸡 – Eat What Tonight

I really like this lemon chicken which resembles very much like the one we have at the economical rice stall. Super crispy chicken coupled with a refreshing sweet lemon-ey sauce drizzle over the chicken but not in anyway affecting the crunchiness of it all.

And I was a bit surprised the sauce isn’t that tough to replicate and the crispiness and texture of the deep fried chicken wasn’t compromised in anyway too. In fact, I did a two versions of it, “pop corn” chicken style and also the chicken chop way.

The often ones we saw from the economical rice stall are mainly the chicken chop style where we get one whole piece of boneless chicken leg by itself. However, I realised the “pop corn” chicken was equally good if not better. Because they are so bite sized, hence they can be easily finished up without effort.

I did a double frying of the chicken and coupled with potato starch flour, that’s how I managed to get the desired crispiness of the chicken and I realised the crisp stays on even after the sauce is added on and it doesn’t cause the chicken to get soggy at all.

  • 3 pcs boneless chicken leg (you can diced them if you prefer bite size style)
  • approx. 60g potato starch flour
  • some cooking oil
  • 1 tbsp light soya sauce
  • 2 tsp corn flour
  • ½ tsp sesame oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • juice of 1 lemon
  • 1½ tbsp plum sauce
  • 1½ tsp sugar
  • 150ml water
  • 1 tsp custard powder mixed with 2 tbsp of water
  • 4-5 slices of lemon

Pan Grilled Barramundi Fish With Lemon Garlic Butter Sauce

Hoola ! Finally I get down to penning another recipe again ! This time I actually pan fried barramundi fish belly from Kuhlbarra and coat it with a lemon garlic butter sauce. Though the name is seemingly long, but it’s actually quite simple to beef up. And since the barramundi fish belly is already succulent by itself, the sauce actually complements the fish by giving the entire dish a very refreshing and tantalizing after taste.

And since this is kinda a western dish, so I thought I would cooked up some spaghetti pasta to go along with it too. And indeed, everything pairs up nicely as an appetizing meal. The barramundi fish belly is high in collagen and omega 3, hence it has a very smooth texture due to the high fats contents.

Pan frying of this fish with some olive oil is excellent as it retains the natural taste and freshness of the fish well. I love the fact that this is so straightforward in preparation and cooking that it was served up easily in 20 minutes.
