Lemongrass Curry Pork Slices 香汁咖哩肉片 – Eat What Tonight

I spent a good amount of time spring cleaning the house recently, taking out all my priceless collection of recipe books and diligently cleaning away the dust that was collected. And amongst all, I found this book which I bought from Taiwan entitled “无敌盖饭“. The recipes featured in this book are collection of meal ideas that are particularly meant for 1 person and which were pretty impressive. Because I am sure everyone knows how difficult it is to cook for a small group of people, moreover for one. And given a choice, people would just chuck the idea of home cooking for own self and might as well do a pack back instead.

So when I was flipping through the book, I started to enjoy more of what’s meant to be a “盖饭”. Basically it’s a simple bowl of plain rice that’s to be covered with any “toppings” you desire and serving it wholesomely in the same bowl itself. With that, it makes a delicious bowl of home cooked food that’s fast, easy and convenient. Washing up is a breeze too with probably a pot and a bowl too. 

That somehow motivates me to wanting to prepare something similar. Especially at times when I am alone at home and instead of wasting $ to order for delivery or buy back when I have ready ingredients at home, it somehow makes a good sense to cook up a dignified fare like such. 

To spruce up the appetite and outlook of the dish further, I included a sunny side up and the meal looks ultra appetizing instantaneously. When it comes to pork slices, generally I prefer fresh pork collar from PurelyFresh anytime because it’s isn’t as fatty as pork belly yet at the same time contains a reasonable amount of fats that doesn’t dry or toughen up after cooking.

  • 1½ tbsp cooking oil
  • 3 chili padis, diced
  • 3 lemongrass, cut into small sections
  • 2 shallots, minced
  • 2 tbsp minced garlics

  • 3 sprigs curry leaves
  • 1 tbsp curry powder
  • 1 1bsp light soya sauce

  • 100ml water

Fish Slices with Sesame Sauce 芝麻酱鱼片

The blowing super hot and cool weather these days is seriously giving many people much of a headache. Especially when the kitchen feels like a furnace just when you wanna cook, a fuss free, quick and healthy cooking is all that you desire. These is one of those days where staying any longer in the furnace kitchen felt like you are going on fire !! Then just when you had finished cooking, the weather suddenly makes a 360 degrees turn and start pouring !

It’s really OMG, isn’t it ? So when Mizkan presents me with their range of varied sauces, you know I just can’t resist using them in my cooking because they are just so convenient and versatile. 

More often than not, we often notice Sesame sauce being used in salads and greens as a salad dressing. But as the usual advocator of Chinese home cooked foods, I decide to incorporate Mizkan Sesame Sauce into some Toman Fish Fillets and did a simple stir fried of it with ginger and chilli padi and serve it simply with plain white rice or congee.

The gist of this dish lies in getting a smooth velvety fish fillet slices that’s well drizzle with sesame sauce and a dash of sesame oil at the end of it. Marinating the fish slices with each ingredient and mixing them well before adding the next one aids in allowing the fish to fully absorb the flavours of the marination. To prevent the fish slices from breaking up during stir frying, a prior blanch of them in some hot oil can do the trick nicely too.

And loving how the very fragrant Japanese made Sesame Sauce blends neatly with the fish slices at the end of it and the dash of sesame oil helps to bring out the entire flavours totally. Overall, it’s a very tasty and convenient to the max home-cooked dish that allows even the most noob cook to whip up with ths most minimal effort.

Fish Slices with Sesame Sauce 芝麻酱鱼片

 

Recipe type: Chinese

Cuisine: Main

  • 150g Toman Fish Slices
  • some shitake mushrooms, sliced
  • ½ tsp spring onion, chopped, with more for garnishing
  • ½ tsp ginger, chopped
  • 1 chilli padi, diced
  • some cooking oil
  • ½ tsp salt
  • ½ tsp Shaoxing wine
  • 1 tbsp egg white
  • ½ tbsp corn flour
  • 2 tbsp Mizkan Sesame Sauce
  • dash of sesame oil

1) Adding the marinade ingredients one by one and mixing well after adding each ingredient can allow the fish slices to absorb the flavours better.
2) Blanching the fish slices in hot oil can prevent the fish slices from breaking up during cooking thereafter.

Claypot Noodles with Barramundi Fish Slices 沙锅鱼片伊面

For those love a good collagen soup stock like myself but lazy to spend 6 to 8 hours cooking it over the stove, here’s another option you can consider now. The Collagen Chicken Stock from The Soup Spoon which will be sold via Kuhlbarra platform from November 2019 is an almost identical alternative. The thick groovy jelly like texture is exactly what it looked liked after we had our own homecooked collagen stock chilled.

Conveniently packed in a 500g bag, you can literally use the entire portion for a 2 person servings at one go. Hence saving you the hassle of freezing the balance. And with this rich and luscious collagen stock, I used it to prepare a very yummy-licious Claypot Noodles with succulent barramundi fish slices from Kuhlbara too !

And because the collagen stock is by itself already so rich and thick, the thickening of the soup gravy in the Claypot Noodles at the end of the cooking can also be eliminated ! It’s an easy packed recipe with little effort but taste as good as it looks.

I used yee mee noodles for this time which works really well because the flavor blends on pretty nicely with the gravy. With the rest of the ingredients liked mushrooms, carrots, green vegetables and barramundi fish as ingredients, this claypot dish makes an ideal and balance one pot meal fit for everyone.

Steamed Fish Slices with Mushrooms and Spicy Turnips

An easy and excellent one plate dish which you can enjoyed with some plain rice or porridge. Whilst I used barramundi fish slices for this recipe, you can enjoy it with most kinds of fish slices with that said.

It also contains mushrooms, carrots and spicy and savory turnips. And alternating the fish slices between the mushrooms and carrots helps to enhance the presentation of the dish which make it more appetizing !

This is a very homely Chinese dish which I had thoroughly enjoyed with some brown rice and which hope you will like it too.

Steamed Egg with Fish Slices

A one-plate steamed dish today with egg, fish slices and luncheon meat ! You can refer to the post here for a precise reiteration on how to churn up a good steamed egg. This is after countless experiments of mine though. So hope it helps !

And to cut the story short today, this supposedly steamed dish idea evolves from one of the dishes I had at the mixed vegetables rice stall previously. It was a Chinese steamed egg with luncheon meat stuffed in between and I thought it was really good. So to facilitate the idea further, I added some fish slices to it to complete the wholesome meal further such that with this dish alone, you get to enjoy egg, fish and meat all in one !

While I also thought that the addition of fish slices will cause the egg surface to be less smoother than compared to if you just steamed the egg alone by itself since there will be water coming out from the fish during steaming which will rendered the egg surface to have a less than perfect texture, but glad that this did not happen and all was still good as you can see.

So sharing this quick one-plate steamed meal here for your next meal inspiration !

Stir Fry Flat Rice and Yellow Noodles with Fish Slices

Have always been a huge fan of flat rice noodles which is commonly known as the Kway Teow in an Asian context. From stir fry to soups, I think literally everything that has an option of Kway Teow to choose from, it will be top on my choice. And this dish is essentially a meal that can be enjoyed at anytime of the day. In Singapore, fried kway teow mee is something that we commonly enjoyed as a breakfast menu, and when it comes to lunch, this option is also available for selection. Even when you goes back home for dinner, this dish will appear at times too as it makes an easy one-pan meal.

Whilst you can commonly have it plain for breakfast with top up of instant fried foods, this version of adding fish slices to it is a healthier version and would certainly perks up the appetite instantly. With just an extra step of pre-marinating the fish and panfrying them, the little extra effort enhances this common dish to a more enjoyable one for sure.

The kind of one-dish meal I can easily polish up a bowl of rice with ! This Broccoli and Pork Slices in Black Bean Sauce is a typical Chinese home-cooked dish that’s absolutely delicious and satisfying. Replace the pork slices with chicken if you’re unable to take pork which will be equally tasty too as the gist of this dish lies in the savoury black bean sauce more than anything else.

I used dry black beans for this and crushed them to bring out the flavors prior to cooking instead of using the bottled black bean paste. For one reason, it’s cheaper to just buy the black beans by itself rather than a whole bottle of the paste if you are not going to use it often. For second reason, you can better moderate how savoury you want the sauce to be in this way according to one’s preferences.

This recipe is a sure keeper because it’s super easy to prepare and perfectly ideal for a quick meal option. Do eliminate the chili if you are cooking for the kids though !
