Tofu Meatballs or LazyMan Meatballs 豆腐肉圆 / 懒人肉圆 – Eat What Tonight

LOL. Wondering why it’s called lazy man meatballs ? Well, I specially name it that way! In most or should I say all of our asian meatballs recipes, most of the times we couldn’t do without water chestnuts or diced carrots in them to give that extra taste and crunch.

And to me, water chestnuts though good, but often pose a challenge with all the peeling as there’s seldom a time I manage to get all properly peeled without cutting my hand. And wastage is often high as there’s often quite a few rotten ones in probably a whole batch that was bought. Yet those that are sold ready-peeled are often too big a bag to finish consuming. After all, it’s just a small portion we need for meatballs.

So set that idea aside, I really love meatballs, asian kind of meatballs I mean. I wanted something that’s really easy to prepare, save aside the tedious peeling of water chestnuts. And carrots aren’t exactly my favourite. Hence, after some trials, I manage to come off with these LazyMan meatballs which maybe should “professionally” be termed Tofu Meatballs, is a mixture of minced meat and tofu together with the perfect marinade and stuffs to attain a smooth meatball texture.

It’s a totally brainless recipe. Crush the tofu into the minced, wrap in all the seasonings, set aside and deep frying them till golden brown. And I absolutely love the golden hue of these meatballs. It’s like you cannot help but popping a few into your mouth as you walk past them because they look so irresistible !

So kudos to these LazyMan Meatballs, I can finally “escape” from the challenge of peeling water chestnuts now !! LOLs.

Tofu Meatballs or LazyMan Meatballs 豆腐肉圆 / 懒人肉圆

 

Recipe type: Chinese

Cuisine: Light Bites

  • 140g minced meat (pork or chicken)
  • 1 egg tofu
  • 1 egg
  • 1 tsp light soya sauce
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 4 tsp corn flour
  • ¼ tsp sesame oil
  • dash of pepper
  • Some cooking oil for deep frying
  1. Mix the minced meat together with the egg tofu, egg and all the rest of the ingredients using hand. Throw the mixture into the mixing bowl several times before setting aside for at least 3 hours in the fridge.
  2. Heat up some cooking oil for deep frying. Roll the minced mixture into balls and drop them gently into the hot oil.
  3. Deep fry till golden brown. Drain on paper towels to soak up excess oil before serving.

1) Using hand to throw the minced mixture into the mixing bowl increases the “stickiness” of the mixture and the meatballs will be more bouncy in texture also.
2) Test the hotness of the oil by putting a chopstick into the oil. If bubbles sizzle around the chopstick, the oil is ready for deep frying.
3) For an extra kick, you can add some seafood such as minced prawns or fish/sotong paste.

Golden Egg Steamed Tofu 黄金豆腐蒸蛋 – Eat What Tonight

Had too much good food during the CNY ? LOL. So it’s time for a simple fare then ! Something to go along with congee or porridge, this Golden Egg Steamed Tofu is perfect for the occasion. It’s light enough as a dish and yet comprises of tofu, egg, salted egg and minced all in one dish.

Probably you may ask.. where’s the tofu arh ? LOL. Well, it has been well hidden under the pile of minced ! The silky egg custard paired alongside with salted egg yolk, savory minced and plain tofu seems quite a good combination for a quiet and light meal after all the heavy indulgence during the CNY.

And I am counting down to my long awaited break that’s forthcoming in another 2 days’ time ! I am gonna take this opportunity to really de-stress and let loose ! And hopefully being MY month of the year, all my well wishes will come true in no time !!

Golden Egg Steamed Tofu 黄金豆腐蒸蛋

 

Recipe type: Main

  • 2 pcs salted egg yolks
  • 1 block tofu
  • 1 egg + 100ml water
  • ¼ tsp salt
  • dash of pepper
  • 1 tbsp cooking oil
  • 140g minced meat
  • 1 tsp light soya sauce
  • 1 tsp oyster sauce
  • ½ tsp sesame oil
  • ½ tsp sugar
  • 2 tsp corn flour
  • dash of pepper
  • some chopped spring onion
  • some fried shallots

Straining the egg mixture removes all the air bubbles so that the egg will be smooth and silky after steamed.
The length of time taken to steam the egg is approximate, depending on the size and depth of the steaming plate used. In general, I prefer the steamed egg to be slightly wobbly on the top after steamed. If you are worried that the egg will be over steamed, you can off the flame around the 15-minutes mark and allow the remaining heat of the steamer to continue steaming the egg.

Claypot Tofu 沙锅豆腐 – Eat What Tonight

It’s been long since I’ve done binge shopping on Taobao and yes, I just did it again !! LOL. Suddenly felt so motivated because all the things I’ve wanted have been carted out and now just hopping for all the “presents” to come earlier so that I can unfold them real soon !! And I guess it’s quite surreal to know that damage will always be done to the wallet after you have your own home because every now and then, you would keep replenishing new stuffs to the house despite whether you really need them. Does this happen to you often too? 

 

I made this Claypot Tofu sometime back and was really pleased with it because it tasted exactly like the one I had at the zhi char stall. Yes, almost identical and there was no doubt about it. Because this is quite a ritual dish that my parents will often order whenever we dine at the coffee shop, hence I was so used to the taste of it that I was trying to cook up one that resembles it all. 

 

 

I enjoyed how I can add abundance of prawns and the different kinds of vegetables that I fancy into the dish, while less the pork belly that some people will include. Because I love roasted pork belly by itself and adding them into the dish will somehow cause it to turn soggy. Hence, even though many people love adding roasted pork belly into this claypot dish, it was never a preference for me. 

 

 

In fact, a simple combination of varied vegetables and prawns, with the sauce cooked till thickened and serving it piping hot in a claypot is all that’s ever needed for me. And enjoyed perfectly with rice, this one pot dish is definitely a winner at all times, and especially if you have to dine solo or whatsoever, just a pot of this alone is enough to capture it all.

Claypot Tofu 沙锅豆腐

  • ½ long cabbage, cut into slices
  • 3-4 pcs black fungus, soaked in water till softened and drained
  • 3-4 pcs sweet peas
  • some carrots, sliced
  • 1 egg tofu, cut into pieces
  • 8 pcs prawns
  • 1 tbsp minced ginger
  • 1 tbsp minced garlic
  • some cooking oil
  • 250ml stock / water
  • 1 tbsp oyster sauce
  • 1 tbsp shaoxing wine
  • 1 tsp dark soya sauce
  • 1 tsp chicken powder (optional if using chicken stock already)

Take note NOT to rinse or wash the tofu with water before deep frying to prevent oil from splattering whilst frying.

Golden Tofu with Fermented Black Beans & Minced Meat 黄金豆腐黑豆豉肉碎

I began to realise that many of our traditional home cooking often involves a certain degree of fermented condiments to spruce up the dish. And recently, I am starting to be quite “obsessed” with using fermented black beans in my cooking too ! LOL. Ever since my mum told me that adding a bit of these dry beans can make the dish feel more tasty, I have been trying it on several different dishes and indeed I do agree with her. I think mum and me do share similar taste buds in certain ways now because all the while, we have always been quite different when it comes to food.    

And one small pack of such beans costs less than a buck. While some people do mention that they will soak the beans prior to cooking, but I actually do not. Because the fermented black beans are in dry version, hence I feel that they should be used as it is. Of course, we shouldn’t be adding too much of it as it’s very salty in nature. But adding a dash or two of it to a dish will definitely enhance the overall taste of the dish.

Combining the beans with a little spice will also add to the good flavour of the dish and sprucing it up with some colours as well. And this time, I had the fermented beans cooked with egg tofu and some minced and I have to say, the dish was so appetising that the entire plate was polished up in no time. The savouriness of it all makes a good complement with a plain congee or rice in particular.

Golden Salted Egg Yolk Tofu 黄金咸蛋豆腐

As I always say, you can never go wrong with anything salted egg yolk ! So is this one too ! In fact, I did a 2 variations of it, one using the usual white tofu, and this time with the egg tofu. And I much much like the egg tofu better. For one, the egg tofu is easier to deep fried because of the lesser water content, especially when you are deep frying from home where the heat from our flame is not as hot as the commercial ones. For a second, the egg tofu, after deep fry, is still tenderly soft on the inside yet with a brilliant golden brown hue on the exterior.

In fact, salted egg yolk dishes aren’t difficult to prepare at all. All you need are some real salted egg yolks compiled with chili padi, curry leaves and garlic, you are all good to go. And I didn’t even include any seasoning in this dish because the salted egg yolks already provide for the savouriness, the slight twinge of spice from the chili padi, and the fragrance from the curry leaves.

And because it was the Mid-Autumn festival earlier, there were many places that actually sell the ready salted egg yolks which have been pre-cooked. I took the chance to grab some though not for making mooncakes, but for beefing up more salted egg yolk dishes. So it was a real breeze cooking this dish as I need not fuss with the raw egg which requires washing away of the mud and and steaming the egg yolks thereafter and ending up with an abundance of unused salted egg whites as well.

Salmon Cubes with Tofu & Shimeiji Mushrooms 三文鱼炒鸿喜菇与豆腐

Hoola ! I am so so in loved with simple home-cooked meals of one plate and one pot dishes recently that I have been doing it almost on an everyday basis !! Because the time after work is already so limited for cooking much say the cleaning up aftermath, such one dishes meal certainly take off from me pretty well. And because the cleaning up thereafter is such a breeze, I can also spend more time on being a couch potato and indulging in my dramas after the meal ! LOL. 

Well, most of us I supposed are just so brain dead after work. Hence, the best luxury we could afford is to be a “Garfield” and couch as long as we could !! 

I usually stocked up quite a fair bit of salmon slabs as it’s the best and easiest dish that anyone can beef up anytime. A simple dash of sea salt and freshly grind black pepper is all good to send it for cooking and be prep for a neat and nice salmon dish henceforth. But every time grilled, steamed or baked salmon also can be a bit sian, isn’t it ? Especially salmon is only one dish by itself, and we would still need to prepare for some other side dishes to complement it.

So by working along that line, I had this Salmon cubes with Tofu and Shimeij mushrooms, a simple stir fried that combines the fish, tofu, mushrooms and some greens all in one dish ! And serving it with a plain congee is all good enough to get it going. No other side dishes required to be prepared as you can find everything deliciously combined all in this one plate dish !

Salmon Cubes with Tofu & Shimeiji Mushrooms 三文鱼炒鸿喜菇与豆腐

 

Recipe type: Main

Cuisine: Chinese

  • 150g salmon, cut into cubes
  • 1 tbsp cooking oil + extra for pan frying tofu
  • 1 tsp chopped garlic
  • 60g shimeiji mushrooms
  • 3 stalks spring onions, cut into sections
  • 30g tofu, cut into cubes
  • Dash of sea salt
  • Dash of freshly grind black pepper
  • ¾ tbsp oyster sauce
  • ¾ tbsp light soya sauce
  • ¾ tbsp cooking wine
  • ¾ tbsp mirin
  • dash of pepper
  • 100ml water
  • 1 tsp corn flour + 1 tbsp water, for thickening
  1. Marinade the salmon with sea salt and fresh black pepper.
  2. Heat up the cooking oil for pan frying the tofu cubes until golden brown. Dish and drain.
  3. With 1 tbsp of cooking oil left in the wok, add minced garlic, shimeiji mushrooms and the white parts of spring onion.
  4. Saute till mushrooms are softened, add in the salmon cubes and pan fried slightly. Add the water and seasonings and allow it to simmer for approx. 10 mins.
  5. Add the thickening mixture, tofu and green parts of the spring onion.
  6. Mix briefly and remove from heat. Garnish as desired and serve hot immediately with rice or congee.

Vegetarian Hotplate Tofu 斋铁板豆腐 – Eat What Tonight

Commonly found in Singapore’s heartlands and neighborhoods are various coffee shops where you can find many individual food stalls selling various kinds of local delicacies under one roof. And a so-called Zhi Char stall is one of such stall commonly found. The name so called is translated from Hokkien which meant 煮炒. And Hotplate Tofu is a widely popular dish you can find from most zhi char stalls locally. Because I enjoyed this dish so much, I even went as far as to get myself a hotplate and attempted the same from home too. Other than the splattering of oil when the hotplate gets heated up of which is not so pleasant, the dish isn’t too difficult to whip up. You can find the original non-vegetarian hotplate tofu from here.

Whilst most hotplate tofu contains minced meat, I attempted with a Vegetarian version over the weekend by having the meat replaced by mashed tofu instead ! The striking resemblance is actually so real that you probably can’t tell much difference till you have tasted it or if you are being told about it.

And no, no flour was being used in the process and it was purely a good old vegetarian Hotplate Tofu, served by a good bout of egg, tofu, carrots and seasoning. And I thought it was really good as it is by this version already ! But if you are attempting for a bigger serving than this, you can always add in some shiitake mushrooms and baby corns to complete the dish further.

So dedicating this dish to all Vegetarians out there, I hope this dish can whet up your appetite and appeal to your taste buds well. Gonna pen down this recipe for my own records purposes too because I am sure I will cook this dish up again.

Creamy Salted Egg Yolk Tofu 咸蛋奶黄豆腐

Can never resist any and all things salted egg yolks ! So here’s another one to whet the appetite further ! Fried tofu coated in a creamy and savoury salted egg yolk sauce that’s easily whipped up by a mix of custard sauce, curry leaves, chilli padis and not forgetting the most crucial salted egg yolks !

If you are just looking for the salted egg yolks without the whites, you can find them from the frozen section of local Sheng Shiong Supermarkets where they are being sold in a tray of 10 which I find it really useful to use in such salted egg yolk dishes as the egg whites are generally not required.

I used egg tofu for this recipe as I find that they tend to complement the salted egg yolk sauce better with the eggy-ness and soft tofu texture. The most time consuming part will be the deep frying of the tofu, otherwise the rest of the cooking is literally fuss-free and straight forward. Hope you will enjoy this dish too !

Spinach Egg Tofu – Eat What Tonight

Unlike the usual spinach tofu where you have the spinach as a different layer on top of the tofu, I actually blend the spinach to create juice in this recipe and incorporate them into the egg tofu making itself hence the green color tofu as they are seen. This is probably a more comprehensive way of incorporating the entire spinach into the tofu making and gives the dish a little more vibes than then usual spinach tofu.

What’s more, the sweetness from the spinach can be channeled directly into the tofu itself but yet it doesn’t feel like you are having the greens itself. For those who steer clear of green vegetables, this is probably a good way for you to enjoy your greens without too much effort too.

I pan-fried the tofu thereafter to give it a little crisp and even enjoyed it as a dish just like that by itself. It’s absolutely healthy and delicious, so why not. But if you find it a little too plain to be eaten that way, you can stir-fry it with some oyster sauce and mushrooms to make it a complete dish all together !

Golden Egg Tofu with Minced, Carrots and Mushrooms

This is an excellent dish to go along with rice ! As the name implies, it comprises of almost everything that you need in a one-plate meal so you literally don’t need anymore other dishes for the meal. The most tedious part is the pan-frying of tofu as tofu has a high water content, hence they tend to have oil splatters whenever frying. It is highly recommended to use egg tofu in tube form as they have lesser water content and to pat them dry with some paper towels before pan-frying.

On my records, there are quite a fair bit of backlog to share and I really hope to make use of this platform to pen down everything as quickly as I can so there will be frequent updates on the blog now. Personally I also use this blog to keep my diary of recipes and do a search whenever I have a craving for some food and see if I ever had the recipe recorded before. Most of the time I would remember what kind of food I’ve cooked before but I don’t remember the exact ingredients, so this blog has been really helpful to me as well. And since it’s a public platform, I also hope my sharing here can be beneficial to some of you out there.

Now that the world is gradually opening up, it’s also time to check out my bucket list which has been pending for more than 2 years !! Looking forward to all the planned trips to come and hopefully I will be able to share my travel and food journey soon too ! In the meantime, do enjoy this dish !!
